No oil recipe and minimum spices required.

Ingredients
- 2 Beetroot
- 1 carrot
- 2 tablespoon yellow mustard seed
- Pinch of hing
- 2 teaspoon salt
- Half teaspoon black salt
- 1 teaspoon black pepper powder
- 1 teaspoon red chilli powder
- 500 ml water
Method
- Slice beetroot and carrot into long thin
- Boil water and let it cool down
- Coarsely grind the yellow mustard seed
- Now take a glass jar add the beetroot and carrot
- Then pour the water
- Now add the mustard seed, red chilli powder, black salt, black pepper powder and hing
- Mix this all well
- Cover it with a cotton cloth and keep in sunlight for 2 to 3 days if good sunlight is there or keep it for 3 to 4 days in sunlight for the drink to get fermented well.
- Every 24 hours stir it and then cover back
- On the four day Kanji is ready to be consumed
- Have it the morning or with your meal
