Creamy Roasted Red & Yellow Pepper Sauce Pasta

This creamy roasted bell pepper pasta is rich, flavorful, and naturally vibrant. Made with roasted red and yellow bell peppers, tomatoes, garlic, and cashews, this sauce is smooth, mildly sweet, and perfectly balanced with herbs and chilli flakes. A comforting pasta recipe that tastes just like restaurant-style but is super easy to make at home.

Ingredients

  • Red & yellow bell peppers
  • 4 tomatoes
  • 2 onions
  • 5–6 garlic cloves
  • 7–8 cashews
  • Red chilli flakes (to taste)
  • Mixed herbs
  • Oil & butter
  • Salt, to taste
  • A pinch of sugar
  • Fried bell peppers (for garnish)
  • Sweet corn (for garnish)
  • Boiled pasta of choice

Method

  1. Roast the red and yellow bell peppers until the skin is charred. Cool, peel, and roughly chop them.
  2. Heat oil and a little butter in a pan. Sauté chopped onions until soft and light golden.
  3. Add garlic cloves and sauté until aromatic.
  4. Add chopped tomatoes and cashews. Cook until tomatoes soften completely.
  5. Switch off the flame and allow the mixture to cool slightly.
  6. Blend the cooked mixture along with roasted bell peppers into a smooth paste.
  7. Heat butter and oil in the same pan. Add the blended sauce.
  8. Add salt, a pinch of sugar, red chilli flakes, and mixed herbs. Cook for 4–5 minutes.
  9. Add boiled pasta and mix well. Adjust consistency with pasta water if needed.
  10. Garnish with fried bell peppers and sweet corn. Serve hot.

Serving Suggestions

Serve with garlic bread or cheesy toast. This sauce can also be used as a pizza base or sandwich spread. We enjoyed this  for dinner.
