Mixed vegetable soup recipe


Hello everyone, winter’s demand for some hot soups so here we are with a healthy and delicious mixed veg soup recipe. With minimal ingredients, this soup turned out to be yummy.

The best way for any mother to make their kids eat some veggies. Again the veggies used here can be adjusted according to your preference. I have used sweetcorn with spring onion and capsicum.

Trying hard to cope up with the tight schedule but my love for cooking and posting keeps me up.

So here with just a simple soup to make your life easy.

Ingredients

  • 2 tablespoon grated ginger
  • 2 tablespoon minced garlic
  • 1 cup Chopped spring onions white
  • 2 to 3 green chilli slit
  • Half cup carrots chopped
  • Half cup capsicum chopped
  • 1 cup sweetcorn
  • 2 cups water
  • 1.5 teaspoon salt
  • 1 teaspoon lemon juice
  • 1. 5 teaspoon sugar
  • 2 tablespoon cornflour
  • Half a cup of water for the cornflour mixture
  • 1 tablespoon oil
  • 1 tablespoon tomato sauce
  • Half teaspoon vinegar
  • 1 teaspoon white sesame seed
  • Half cup spring onion greens

Method

  • Take a pan heat oil add in ginger and garlic, and saute for a few seconds
  • Add in the onion(spring onions white)
  • Now add in green chili. Cook this for few seconds
  • Add in carrots, capsicum and sweetcorn give it a nice mix
  • Add the tomato sauce and vinegar
  • Pour in water with salt and sugar
  • Let it come to boil
  • Take a small bowl add the cornflour with water and make a thick mixture
  • Pour this mixture in the soup bring it boil till you receive thick consistency.
  • Off the flame, squeeze some lemon juice and enjoy.
  • Garnish with spring onions and white sesame seeds
