Potato and eggplant curry recipe/ Aloo Baigan sabzi


Aloo baigan is one recipe you can find in every dhaba in India. One can never go wrong with this dish. Cooking time is less and tastes just delicious.

The Whole of India has their recipes to share with the world, but today I am sharing with you my recipe which is quite simple to make with just a few ingredients.

I was never a fan of eggplants but after tasting this recipe at a friend’s house I loved it. So here’s my way of making Aloo Baigan sabzi.

Though in the year 2023, TasteAtlas has rated this recipe 60th place, I think they have gone wrong somewhere. I bet after cooking this recipe you will love it.

Aloo Baigan ki Sabzi

Aloo Baigan

Ingredients

  • 250 grams Eggplant/ Baigan ( green)
  • 4 potatoes cut into cubes
  • 1 cup tomato chopped
  • 2 onions chopped
  • 3 green chilli chopped
  • 2 bay leaf
  • 1 inch cinnamon stick
  • 2 black pepper corn
  • 2 cloves
  • 1 tablespoon garlic paste
  • 1/4 teaspoon turmeric/ haldi powder
  • 2 teaspoon coriander powder/dhaniya
  • 1 teaspoon red chilli powder
  • 1 teaspoon kashmiri red chilli powder
  • 1.5 teaspoon Garam masala powder
  • 1.5 teaspoon salt
  • 4 cups water
  • Coriander leaves for garnish
  • 2 tablespoon oil
  • 1 teaspoon kasuri methi
  • 1/4 teaspoon jeera/ cumin
  • 1 teaspoon Hing / asafoetida

Method

  • Take a pressure cooker, pour oil add in bay leaf , black pepper corn, cloves and cinnamon stick let it turn brown
  • Now add in jeera with onion and garlic saute till soft
  • Add green chilli and tomatoes Cook till soft
  • Now add Aloo and baigan fry it
  • After few seconds add given spices except garam masala powder
  • Pour water as per required consistency
  • Now add garam masala powder with salt
  • Close the lid of the cooker
  • Take one Whistle and off the flame
  • Garnish with coriander leaves and serve hot with some roti
