Thai curry is a very fragnant and satisfying curry which has it’s vegetarian version also.
Loaded with colourful vegetables this is a fuss free recipe for you.
The base is made by using coconut milk which is also vegan. Coconut milk in this curry gives that extraordinary taste.
Creamy texture of the curry comes from coconut milk now you all know.

Thai curry recipe that can come on the table in just 30 minutes. One can use ready to eat Thai curry paste or you can make one at home just like me.
Though ingredients from Thailand will a different taste and we using local stuff the taste may vary but it wont make a huge difference.
This recipe can be easily customized according to one’s preference of veggies.

I prefer sauteing the veggies first, you can skip this part. Then add the veggies in the curry.
To get the best of taste and texture do try cooking this with homemade paste.

Ingredients:
- 1 cup Broccoli
- Half cup Baby corn
- 100 grams Paneer
- 1 cup Red/ yellow Bell peppers
- 1 cup zucchini
- 2 onions sliced
- 4 to 5 Green chillies
- 8 to 10 garlic cloves
- 2 tablespoon lemon grass
- 1 teaspoon lemon zest
- 1 teaspoon cumin seed
- 1 tablespoon ginger
- 1 cup coriander leaves
- 2 teaspoon coriander powder
- 1 teaspoon black pepper powder
- 1 cup coconut milk
- 2 tablespoon lemon juice
- 2 teaspoon salt or as per taste
- Oil/ Butter for cooking and sauteing
Procedure for Green Thai paste
- Take a mixture jar add onions, green chilli, ginger, garlic, coriander leaves, lemon grass, cumin seed, coriander powder, black pepper powder, lemon zest along with few tablespoon of water. Grind it into a fine paste. keep aside
- Now, heat the same kadhai with butter and saute all the veggies given and place them on kitchen towel
- Now, take the same kadhai pour oil and butter fry the curry paste we made till the aroma changes on low flame.
- Once the paste is done then add in all the sauteed veggies, paneer and give it a nice mix
- Pour coconut milk with a little water and mix it.
- Add lemon juice, salt
- Sprinkle black pepper powder, give it a boil, off the flame
- Enjoy this with rice you will love it
