Winter is the only season where one eats to their stomach full throughout and still everything is digested. Blame it on the weather hahaha.. This weather calls for something warm and soothing like soup.
So let’s explore a soup recipe today everyone’s favourite sweetcorn soup.
Numerous variations are available but here’s mine.

Do keep in mind for the best taste corn has to be fresh. I prefer fresh one’s than the canned.
To make this soup more creamy I have added potato.

Ingredients
- 2 cups sweetcorn
- 1 potato
- 1 onion
- 10 to 12 garlic cloves
- 1 inch ginger piece
- 8 to 9 black pepper corn
- 2 cups water
- 1 teaspoon salt
- 2 tablespoon capsicum finely chopped
- Half cup spring onions
- 2 tablespoon olive oil
Method
- Heat a pan pour oil then add garlic and ginger along with black pepper corn
- Saute it then add in potato and sweetcorn
- Pour water, add salt
- Bring it to boil
- Let it cool down
- Blend it into a smooth paste
- Using the water
- Heat the same pan with olive oil pour the sweetcorn mixture into it
- Adjust the water consistency, boil it again
- Garnish with some spring onion greens and capsicum
- Enjoy it hot.
