We all celebrate Sankranti in full zest. Every state has its own name for Sankranti. It’s a celebration on agricultural yield every year. Communal gathering and feast take place at different levels to celebrate this festival.
In Uttarpradesh state we cook a special Khichadi on this occasion with urad dal / black gram and all the seasonal vegetables available in the market or from one’s field.

This is harvesting festival which involves lot’s of food and enjoyment.


Sharing with you our home special Khichadi which is cooked every Sankranti. Believe me when I say the taste of the Khichadi cooked on Sankranti is never matched with any Khichadi made the whole year. This Khichadi tastes like prasad with special blessings from God. No comparison at all.

Ingredients
- 2 cups mixed vegetables ( carrots, French beans, potato, green peas, capsicum)
- 2 tablespoon oil
- 2 tablespoon ghee
- 1 teaspoon mustard seed
- 1 teaspoon cumin seeds
- Half teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 2 teaspoon coriander powder
- 3 to 4 green chilli
- 1 cup tomato
- 1 tablespoon garlic paste
- Salt as per taste
- Pinch of Hing
- Half cup mixed lentils
- 2 tablespoon whole urad dal ( soaked 3 to 4 hours)
- 1 cup rice
- 2 cups water or according to your preference
- Generous amount of coriander leaves
- 1 Aam ki khatai Aam ki khatai
Method
- Wash rice and lentils and soak it only urad dal for 3 to 4 hours, Keep aside
- Now take a pressure cooker pour oil and ghee once it’s hot enough add mustard seeds n cumin seeds. Let them crackle
- Then add in the chopped veggies with onion and saute for few minutes
- Later add crushed garlic along with green chilli
- Mix this well,now add in hing then add in washed rice n lentils
- Saute for few seconds then add tomatoes along with the masala given
- Mix this well, Pour water add some Chopped Coriander leaves and Aam ki khatai Aam ki khatai
- Add salt adjust the water consistency if you need, bring it to boil, close the lid. Let three whistles come off the flame
- Once the pressure cooker has cooled down completely open the lid and enjoy this hot Khichadi.
