Easy Koshimbir Recipes: Healthy Salad Options


I was first introduced to this yummy recipe by my neighbour who was a Maharashtrain as a kid. This salad just hit me in a different way. You mothers will definetly relate to this as a kid we all use to love what our neighbours cooked, rather than our Mom.

I can remember it was Ganpati festival time and we all as kids enjoyed hopping to pandals and wait for the mahaprasad.

Koshimbir

Cucumber Koshimbir with curd is a classic salad refreshing, creamy and perfect for summers. I love this all season though.

This is a cooling side dish and traditionally served during festivals. You can also this salad in thalis.

Cucumber Koshimbir – Two ways

Koshimbir without curd

Ingredients

  • 2 medium cucumber grated
  • 3 tbsp powdered roasted peanuts
  • Salt as per taste
  • 1 tsp ghee
  • 1/2 tsp mustard seeds
  • 1 green chilli, finely chopped
  • 6-8 curry leaves
  • 2 tbsp grated fresh coconut
  • 2 tbsp coriander leaves, finely chopped
  • 1/2 cup fresh curd( yogurt) whished until smooth

Method

  • Grate cucumber, sqeeze excess water.
  • Add peanuts and salt. Mix this well.
  • Heat ghee, add mustard, chilli, curry leaves.
  • Pour temering over cucumber.
  • Add coconut and coriander leaves. Mix all this well and serve

Creamy koshimbir with curd

Ingredients

  • 2 medium cucumber, grated
  • 3 tbsp powdered roasted peanuts
  • Salt to taste
  • 1/2 cup curd whisked
  • 1 tsp ghee
  • 1/2 tsp mustad seeds
  • 1 green chilli,chopped
  • 6 – 8 curry leaves
  • 2 tbsp grated coconut
  • 2 tbsp coriander leaves

Method

  • Grate cucumbers, sqeeze excess water.
  • Add peanuts and salt.
  • Mix in whisked curd.
  • Heat ghee, add mustard seeds, chilli, curry leaves.
  • Pour tempering over cucumber.
  • Add coconut and coriander. Mix all well. serve
