This chaat is made with white peas or vatana. Soaking is done a day before, you can boil n store them in the refrigerator. Use when required.

The cooking process is a bit of work for first-timers, as we don’t want overcooked and mushy peas. It has to be cooked perfectly.

Matar chaat

Ingredients

  • 1 cup white peas boiled
  • 1/2 cup onion chopped
  • 1 teaspoon chaat masala
  • 1 teaspoon Kala namak
  • 1 teaspoon green chutney
  • 1 teaspoon tamarind chutney
  • Fresh coriander leaves
  • 1 teaspoon garam masala
  • 1/2 teaspoon jeera powder
  • Pinch of salt
  • Nylon sev

Method

  • Take a bowl to add boiled matar
  • Now add onion, green n tamarind chutney, chaat masala, jeera powder, Kala namak,garam masala powder salt n coriander leaves
  • Mix this well
  • Take the serving plate place the matar chaat add a spoonful of both the chutneys, sprinkle Kala namak, chaat masala
  • Garnish with onion and sev

Pickled Red Onion recipe


Visiting restaurants is always fun, coz it’s with our loved ones. I do have this curiosity about whatever I eat. I am like this dish has these spices or that…. all in my mind. While my family is enjoying their food I am guessing or sometimes I go and ask the staff.

Ok…this is not about me but the story behind the making of this pickled onion. I was so fascinated by the colour n taste. Decided in my mind that I am going to make this….but it took a bit long. Never mind

Making this pickled onion is so very easy. One needs shallots/onions which are preserved in vinegar and stored in the refrigerator.

Why buy it from the store when you can make it without preservatives. Give your family the best, no more packed food.

Can be used for 10 days if kept in the refrigerator.

So! which onions can be used?

The best I would suggest is the small onion, which tastes a bit different. Not the white ones they are too sweet.

Which jar to use?

The glass jar is the best to pickle any food. Even if you have food grade plastic jar don’t use it. Glass is best.

How do you get that pink colour?

Oh…yes… you guessed it right it’s the beetroot, which gives the colour 😉

How many days does this last?

No worries this will last for 10 days if stored in the refrigerator.

Pickled Red onion

Ingredients

  • 4 to 5 small red onion
  • 4 to 5 black pepper
  • 1 teaspoon salt
  • 2 teaspoon sugar
  • 1 cup vinegar
  • 3 to 4 green chilli
  • 1 tablespoon beetroot chopped

Method

  • First, give a small slit to the onions
  • Take a glass jar to add the onions, green chilli, black pepper, beetroot, salt, sugar and vinegar
  • Mix it well with a spoon.
  • Close the lid and keep it untouched for 12 to 15 hours.
  • Then refrigerate it and enjoy it with your naan, kulcha or piping hot rice.

Greek salad recipe


Salads have been the most important part of any country, each one has its own version and variety. Today I am exploring this Mexican salad. Tastes delicious, it’s wholesome, full of protein, fibre, flavourful and healthy. What else can one ask for? Have this Greek salad just a bowl and you are done.

This particular salad is made with boiled chickpea and feta cheese. A whole lot of veggies are also added with a salad dressing to enhance the flavour. I have been a fan of this wholesome salad since I ate this, my son drools over this.

Dressing in this salad should be added only before serving, otherwise, the salad will turn soggy. One can mix all the given ingredients and refrigerate them and add the dressing while serving.

Ingredient

  • 1 cup boiled chickpea
  • 1 cup sliced cucumber with the skin
  • 3/4 cup onion chopped
  • 1 tomato chopped
  • 1 cup spinach leaves chopped (optional)
  • 2 tablespoon lemon juice
  • 1 tbsp black pepper powder
  • 1 tbsp white sesame seeds(roasted)
  • 1 cup tomatoes chopped
  • 1/2 tbsp red chili flakes
  • 1/2 tbsp oregano
  • salt as per taste
  • 1 tsp sugar
  • Coriander leaves chopped
  • 200 grams Feta cheese
  • 4 tbsp olive oil
Salad

Method

  • Take large bowl, add boiled chickpea.onion, cucumber, tomato,spinach, lemon juice, black peper powder, sesame seeds, red chili flakes, oregano, sugar, salt, coriander leaves, olive oil.
  • Give it a nice toss
  • Now, crumble feta cheese and add in the salad
  • Mix it again
  • Greek salad is ready to be served

Lay’s Cheese Chaat

Recipe

  • One pack of Lay’s chips
  • 1/2 cup Chopped onions
  • 1 tomato chopped
  • 2 tablespoon Green chutney
  • 2 tablespoon veg burger mayonnaise
  • Black salt
  • Few coriander leaves
  • Black pepper powder
  • Cheese slices

Method

  • Spread Lay’s on a microwave safe plate
  • Top them with Chopped onions , tomato, green chutney, black salt, coriander leaves and last the main ingredient cheese slices
  • Microwave it for few seconds till cheese melts
  • Remove it from the oven
  • Sprinkle some black pepper powder and enjoy

Mushroom Taka Tak


This recipe is so easy and quick to make, let me tell you it took me ten minutes to just cook. Taste wise it was awesome.

If you are having guests over for dinner this one subzi will be your highlight as the guests will definitely go drooling over this yum recipe.

Spices used here are minimal , main masala is the ginger garlic n green chili paste, which gives this recipe the restaurant taste.

How to clean 🍄mushrooms?

Many just clean with a dry cloth and use them, but I prefer blanching them in hot water and them cleaning with kitchen towel.

Which mushroom are used here?

White mushrooms are used here which is widely used for culinary cooking.

Mushrooms are high in water content. They don’t need to be deep fried, use them directly in the recipe.

In my house it’s only me and my son who love mushrooms, rest all just look at it like a fungi😀 many vegetarian do not eat this mushrooms as they are a fungi…

Mushroom Taka Tak

Ingredients

  • 1 cup mushrooms
  • 1 capsicum Chopped
  • 1 onion chopped
  • 2 tablespoon garlic
  • 1 1/2 tablespoon ginger
  • 5 to 6 green chili
  • 1 tablespoon tomato sauce
  • 1 tablespoon kashmiri red chili powder
  • 1 tablespoon garam masala powder
  • 1 tablespoon oil
  • 1 tablespoon butter

Method

  • Blanch mushrooms and clean them with the kitchen towel.
  • Later cut into pieces
  • Take a blender, grind ginger, garlic n green chili into fine paste.
  • Add 1 to 2 tablespoon water if you want
  • Heat a kadhai with oil n butter
  • Pour in the grinded paste and saute till the raw smell is gone
  • Now, add chopped onions, saute till translucent
  • Add in tomato, keep it half cooked
  • Now add capsicum give the veggies a stir, add in the mushrooms mix again
  • Add red chili powder, garam masala powder and tomato sauce with salt
  • Give it a nice mix and cook for five minutes
  • Mushroom Taka Tak is ready to be enjoyed with roti , Naan or parathas

Kurkure Bhel

Ingredients

  • Pack of kurkure (favourite flavour)
  • 1/2 onion Chopped
  • 1 tomato chopped
  • Coriander leaves
  • Nylon sev
  • 1 tablespoon green chutney
  • 1 tablespoon tomato sauce
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon Kala namak/ rock salt
  • 1/2 teaspoon red chili powder

Method

  • First open the pack and keep aside some kurkure, rest you crush them up.
  • Now in a mixing bowl add crushed kurkure, onion, tomato, red chili powder, chaat masala, Kala namak, coriander leaves, sev n tomato sauce.
  • Mix all this well
  • Add in the leftover kurkure and mix
  • Take a serving glass or bowl
  • Fill the kurkure bhel top with some sev and serve this to your guests or friends.

Ingredients

  • 5 to 6 crushed Chocolate oreo biscuits
  • 2 cups vanilla icecream
  • 4 teaspoon instant coffee concentrate
  • 1 cup milk (chilled)
  • Chocolate syrup (optional)
  • Whipped cream for garnish
  • Some crushed oreo biscuits for garnish

Method

  • In a blender jar add milk, crushed oreos, icecream, chocolate syrup (if using) instant coffee
  • Blend this on high speed
  • Pour this in a serving glass
  • Top it with some whipped cream and oreo biscuits
  • Ready to enjoy

White sauce


White sauce has become so legendary that it goes well with everything you cook.

Known as Bechmel sauce in France. Serves well with pasta, Mac n cheese, nachos n sautéed veggies.

This is really simple to make and store if you want. Butter is sautéed with refined flour and later add milk. That’s how simple this is.

Utensils used here

If you use a non stick pan that will be better. If not a good stainless steel pan also works well.

White sauce

Recipe

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoon maida/ refined flour
  • 3 cups milk
  • Half tablespoon salt
  • Half tablespoon black pepper powder
  • 2 to 3 tablespoon grated cheese

Method

  • Heat a pan add butter/oil let it melt, add in the flour and saute till colour changes
  • Pour in the milk , keeping rest for further use
  • This mixture starts to thicken, add more milk to it
  • It should be of pouring consistency
  • Lower the flame add black pepper powder, salt and cheese
  • Give it a nice mix.
  • There shouldn’t be any lumps in it
  • Once it boils, off the flame
  • White sauce is ready for use

Tip

If you are struggling with the lumps in the sauce, then just blend the sauce in blender for 30 seconds only, you will get creamy and smooth white sauce. But keep in mind , the mixture is hot use blender accordingly.

Pan Fried Banana

Here we only need sugar, butter, cinnamon powder and some Chopped dry fruit. That’s it…sounds cool…right.

We need semi riped banana here, over riped will be too mushy.

Pan Fried banana

Ingredients

  • 2 bananas Chopped
  • 1 tablespoon Chopped nuts
  • 1/2 teaspoon cinnamon/ nutmeg powder
  • 3 tablespoon sugar
  • 1 tablespoon butter

Method

  • Take a non stick pan, add butter
  • Let it melt, add in sugar
  • Let the sugar dissolve
  • Now place the Chopped bananas on the butter and fry till golden brown in colour
  • Off the flame, place the fried banana on a serving plate
  • Garnish with cinnamon/ nutmeg powder
  • And some Chopped nuts
  • Pan Fried bananas are ready for serving

Bun maska is nothing but bread butter, with a little twist here. This Banarasi Bun maska is one of the best bun I have had in my life, simple and sober.

Banaras has a very unique way of toasting their buns, the charred taste of the bun with dollops of butter applied on it makes one craving for more.

With my recent visit to Varanasi I did get the opportunity to taste all the famous stuff Varanasi is famous for. One of them is this Bun maska. To be frank this was my husband’s favourite and I use to wonder what is it…..now after tasting this Bun maska I am in love with it.

So thought of recreating the Bun maska which I had in Varanasi with you guys, so that you can enjoy if not possible to reach 😉

Bun maska

Bun Maska

Ingredients:

  • 2 burger bun or bread slices
  • Amul butter
  • Chaat Masala
  • Black salt/ Kala namak

Method:

  • First cut buns into two slice
  • Apply butter on both the sides of bun or bread
  • Place a grilling stand on fire
  • Keep the buns on them for the smoky taste
  • Turn them quickly to toast on both the sides
  • Remove from fire and keep on a serving plate
  • Apply generous amount of butter on the buns
  • Sprinkle chaat masala and black salt according to taste
  • Place the bun on one another
  • Toast them again on fire quickly
  • Apply butter on top of the buns serve them hot.
  • Bun maska is ready to be enjoyed the Banarasi way.

Winter’s require some extra warmth, what better way than cozying up in your blanket and sipping this pipping hot… Hot chocolate with some garnish on top, enjoy it with your family n loved ones. Chocolate is such a beauty that sipping or having them brings a smile on anyone’s face, do you agree with this. I would like to say one more thing here, we many a times tend to ignore the product we buy, like the brand if something is cheap one jumps to buy that, saying it’s all the same only different brands price their product according to their demand, but that’s not true if you buy a high quality product the result will also vary to a huge extend, what I am saying is buy a good brand for chocolate powder here you will notice the change.

Hot chocolate

At times kids do get bored of having their regular milk with all the protein powder, they search for something special and different. My twins started asking me for hot chocolate, which I did oblige to. So thought of storing this yummy mixture.

Made them in bulk quantity and stored it in air tight container. Now, even if I am not at home they boil the milk and add hot chocolate premix… Voila… All good to go.

Sharing with you this simple recipe of hot chocolate premix, if you have a huge craze for them make and store. Serve them to your guests on any chilling winter day,this keeps one warm.

Hot chocolate

Hot Chocolate Premix

Ingredients

  • 125 grams milk powder
  • 100 grams powdered sugar or according to sweetness
  • 120 grams cocoa powder
  • 85 grams cornstarch

Ingredients for garnishing

  • 2 tablespoon chocolate chips
  • whipping cream for topping (optional)

Making of premix

  • Take a mixing bowl, add in cocoa powder, milk powder, powdered sugar, cornstarch give it a nice mix
  • See that there is no lumps
  • For better result seive it
  • Store it in air tight container and freeze
  • Your premix is ready for use
  • This lasts for 2 months in freezer.
Hot chocolate topped with whipping cream

Method of making Hot chocolate using premix

  • Take a saucepan boil 250 ml milk, once it starts boiling add 1 tablespoon premix powder
  • Boil it for 1 minutes till a bit thick
  • Add one tablespoon melted chocolate or if you have any chocolate bar use it
  • Boil again
  • Off the flame
  • Take serving glass add some chocolate chips
  • Pour in the hot chocolate
  • Add more premix powder if you want it thick
  • If you wish, top it up with some generous amount of whipping cream and garnish with chocolate chips
  • If you don’t have whipped cream that’s ok skip it
  • Garnish with more chocolate chips
  • A yummy Hot chocolate is ready to served

Corn starch can’t be skipped in this recipe as it gives thickness to Hot chocolate. Adjust premix powder according to your desired thickness

Kala Jamun juice

Kala Jamun juice

Ingredients

  • 1 cup de-seeded jamun/java plum
  • 1/4 cup sugar (or according to taste)
  • 1/4 tablespoon jeera powder /cumin
  • 1/4 tablespoon Kala namak /black salt (optional)
  • 1 tablespoon lemon juice
  • 1 cup water

Method

  • Boil Jamun with water and sugar, for 2 minutes
  • Let it cool down completely
  • If you haven’t de-seeded the Jamun, do it after boiling
  • Pour the mixture in a blender
  • Add jeera powder, lemon juice and salt
  • Blend on high speed
  • Strain the Jamun pulp
  • This pulp is thick
  • store it in air tight container
  • And dilute it with water when serving
  • This stays fresh for a week, if you have boiled.
  • Serve it chilled
  • Kala Jamun juice is ready in this lovely weather.
