Let me just tell you that Mexican rice is not any plain rice, but a rice full of flavours. Every Indian caneasily relate to Mexican dishes as they are full of spices, just the way we all want. The recipe that i am sharing here is just the way i make at home.
What is Mexican rice?
Mexican rice is a recipe whish has spicies added to it with that cumin powder and dash of nutty flavour.

Mexican rice is also known as arroz rojo means red rice. This rice is usually red in colour. You can go for any rice which is non sticky. I have used Basmati rice for this recipe.
Let’s get the recipe below
ingredients
- 2 tablespoon butter
- 3 tablespoon olive oil
- 1 tablespoon garlic minced
- 2 to 3 green chillis chopped
- 2 onions finely chopped
- 1 cup tomato puree
- 1 cup basmati rice boiled
- half cup capsicum chopped
- half cup sweetcorn boiled
- 1 cup boiled rajma
- 1 teaspoon cumin powder
- 1 teaspoon garlic powder
- 1 tablespoon kashmiri red chilli powder
- 1 teaspoon black pepper powder
- chilli flakes
- mixed herbs
- Salt as per taste
- 2 tablespoon tomato sauce
Method
- Take a wok add oil and butter let it heat now add in garlic and green chilli
- Then add in chopped onions let it cook well, Now pour in the tomato puree give it a nice mix cook for few seconds
- Add in red chilli powder again give it a nice mix till the oil oozes from sides
- Add in boiled sweetcorn and capsicum
- Now add boiled rajma with the spices garlic powder, black pepper powder, mixed herbs, salt, cumin powder and Chilli flakes.
- Mix this all well Now add tomato sauce
- Mix it again , it’s time to add in the basmati rice
- Mix everything very gently as we don’t want the rice to break
- Coat everything well let it heat
- Serve it hot
- This spicy Mexican Rice is ready
