If you love a little heat in your food, there’s nothing quite like a spoonful of homemade chilli oil. It’s that one condinment that instantly transforms a simple dish into something bold,flavourful and unforgettable. From noodles to momos, soups to stir-fries, a drizzle of this red-golden magic adds both spice and soul to every bite.

The best part? You can easily make it at home with ingredients you probably already have in your kitchen. This recipe creates an aromatic chilli oil infused with warm spices, garlic and just the right amount of heat.
Let’s get the recipe
Ingredients for Infusing the Oil
- 1 cinnamon stick
- 2 star anise
- 4-5 cloves
- 1 teaspoon black peppercorns
- 3-4 green cardamom
- 1.5 cup Oil (use neutral oil like sunflower, sesame or vegetable oil)
For Flavour Base
- 1 small onion, finely chopped
- 1-inch ginger, chopped
- 5-6 garlic cloves, chopped
- A handful of fresh coriander leaves
For Chilli Mix
- 3 tablespoon chilli flakes
- 2 tablespoon sesame seeds
- 2 tablespoon Kashmiri red chilli powder( for colour and mild heat)
- 2 tablespoon fried garlic
- 1/2 teaspoon sugar
- 1 tablespoon vinegar
- Salt to taste
- 1 tablespoon soy sauce
Method
Step-1: Infuse the Oil
Start by heating oil in a pan on medium heat. Once it’s warm, add cinnamon, star anise, cloves, black peppercorns, cardamoms.
Let them sizzle gently. This step releases their aromatic oils into the oil, creating a beautiful base flavour.
After about 2-3 minutes, when your kitchen smells like a cozy spice bazaar, remove all the whole spices and discard them.
Step-2 : Build the Flavour
In the same oil, add the chopped onions, ginger, garlic and coriander leaves.
Let them saute until they turn soft and golden brown, this adds depth and a subtle sweetness to your chilli oil.
Once done, let the mixture simmer for a few more minutes. Then strain the oil through a fine sieve to remove all the solids. You now have a fragnant, clear base oil.
Step-3 : Prepare the chilli mix
In a large heatproff bowl, combine chilli flakes, sesame seeds, kashmiri red chilli powder, fried garlic, sugar, vinegar, salt and soy sauce.
This mixture will form the heart of your Chilli Oil
Step-4 : Pour the Magic
Now comes the fun part!
Carefully pour the hot, strained oil over the chilli mixture. You’ll hear a sizzle as the ingredients bloom in the heat. Stir gently to combine everything.
Step-5 : Cool an d Store
Let the oil cool completely at room temperature.
Once cooled, transfer it in a a clean, dry glass jar with a tight lid.
Store in a cool, dark place for up to a month- or refrigerate it for longer shelf life. The flavours intensify over time, so it actually tastes even better after a day or two.
Tips to Get it perfect
- Colour without extra heat: Use Kashmiri red chilli powder for beautiful red hue and mild flavour.
- Boost aroma: Toast your sesame seeds lightly before adding them to the mix.
- Go easy on soy sauce: A little adds umami depth, but too much can overpower the chilli.
- Customize it: Add crushed peanuts or fried shallots for extra crunch and texture.
