Udon noodles have been part of japanese cuisine for centuries – believed to have been influenced by Chinese wheat noodles introduced to Japan long ago.

There’s is something about a steaming bowl of spicy udon noodles that instantly lifts the mood. Udon noodles can be made for a quick dinner or serve when there’s party at home, perfect and comforting.

This recipe is a perfect balance of crunchy veggies and a dash of heat.

Ingredients
For Stir Fry
- 2 tbsp Oil
- 1 tbsp chopped garlic
- 1 onion, chopped
- 1 cup broccoli florets
- 1/4 cup red bell pepper, chopped
- 1/4 cup yellow bell pepper, chopped
- 1/4 cup green capsicum, chopped
- 1/2 cup shredded cabbage
For the sauce
- 1 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp gochujang paste( Korean chilli paste)
- salt to taste
For Garnish
- Drizzle of chilli Oil (for extra spice)
Main ingredient
- 1 pack cooked Udon noodles
Instructions
- Heat the oil in a large pan or wok over medium heat.
- Add chopped garlic and saute until fragant.
- Toss in the onions and cook until lightly golden.
- Add broccoli, bell peppere, capsicum and cabbage. Stri fry for 2 to 3 minutes. keep them crispy
- Ina small bowl, mix all the sauce and the chilli paste with salt
- Pour this mixture tnto the pan and stir well.
- Add cooked udon noodles and toss everything until coated well.
- Finish this by a drizzle of chilli oil for that spicy taste.
Serving Tips
- Sprinkle with sesame seeds
- Pair it with lemon soda
