Come winter and market is filled with Matar or green peas as they are called,this vegetable is used in every dish and it never dishearten us..This is a fav of my BIL you give him all season matar to eat hell never say no,,lol.This recipe which i am going to share today is common one in all the UP(uttarpradesh) households in winter seasons eat them as snacks or launch any thing as you prefer.This can be stored for weeks without freezing it..So lets see what goes in making this….

Ingredients
- 2 cups flour(one cup wheat and one cup refined flour)
- 1 1/2 cup of matar(green peas)
- 4 to 5 tsp of green chili(as per your taste)
- 2 to 3 tsp oil
- 1/2 tsp amchur powder
- 3 tsp roasted besan(chickpeas flour)
- 4 to 5 garlic
- 1 tsp asafoetida
- 2 tsp cumin seeds
- some coriander leaves and garlic leaves
- oil for frying
METHOD
- I used my pressure cooker in making matar kachori as it easy and quick.Heat oil add green chili,garlic cumin seeds matar and salt,close the lid and take 2 to 3 whistles.Dont add water as it cooks in its own steam.cook on medium flame
- let the cooker cool down,open up there can be seen moisture dry them up.
- after cooling grind the mixture
- remove it in bowl add besan,coriander and garlic leaves in it.do check the salt and adjust it as per the taste
- now make the dough ready mix maida and wheat flour with oil and salt this process is called moyan and keep aside for 10 minutes
- take small balls of lemon size n roll them and stuff it with the mixture using tablespoon,make kachoris of rest of the mixture a keep ready for frying
- heat oil in frypan deep fry the kachoris in it till golden brown
- strain on the kitchen paper
- serve hot with coriander chutney or curd
