Kathal ki sabzi/ Jackfruit curry recipe


Kathal ki sabzi is a very special curry as in Uttarpradesh this sabzi was served during weddings or if there is something special in the house. This sabzi is considered as a royal curry for all the vegetarians then. Now I can see the culture is fading away. But in my house this culture is still going on. We celebrate every occasion with kathal ki sabzi.

I have made this in a traditional way just like my Mil makes. We bring this jackfruit chopped from the market as chopping jackfruit is quite a work.

Cooking jackfruit is quite easy, I have used my pressure cooker to cook. You can use your instant pot also. First we need to fry the pieces of jackfruit in mustard oil. If you are adding potatoes then Chop them and fry.

Spices used here are whole spices grounded in the grinder jar. This gives the curry a very pungent flavor and whole house is filled with the aroma. That’s why you need to add in fresh spices. It enhances the flavour more.

Cooking kathal ki sabzi to many it sounds a tedious process but believe me after watching this recipe you will definitely change your mind.

Kathal ki sabzi

Ingredients

  • 1 tablespoon garlic
  • 1/2 tablespoon ginger
  • 1 mace
  • 1 pinch pathar phool/ black stone flower
  • 1/2 cinnamon stick
  • 1 star anise
  • 5 cloves
  • 5 black pepper corn
  • 1 tej patta
  • 1/2 teaspoon haldi powder
  • 3 to 4 teaspoon coriander powder
  • 2 teaspoon red chilli powder
  • 1/2 kg kathal/raw jackfruit cut into pieces
  • 2 potatoes cut into squares
  • 4 onions
  • 1/2 teaspoon mustard and cumin seeds
  • 1.5 teaspoon salt or according to taste
  • 2 cups water or to desired consistency
  • 6 to 7 tablespoon mustard oil

Method

  • Heat oil in a pan and shallow fry the kathal till light brown with potatoes
  • Remove and keep aside
  • Now in a grinder jar add 2 chopped onions, black pepper corn, ginger, garlic, mace, clove, black stone flower, red chilli powder, coriander powder, haldi powder grind it to fine paste. Add water if required. Keep aside
  • In a pan pour mustard oil let it heat now add in the whole spices { Tez patta, cinnamon stick, star anise} with mustard seeds and cumin seeds
  • Then add in chopped onions and cook till done
  • Once the onion is done add the grinded masala in it and cook till the sides of the pan leaves oil.
  • Add in the kathal , potatoes with water and salt
  • Mix it well
  • Transfer this into to the cooker for perfect cooking.
  • 2 whistles and your kathal ki sabzi is ready
