Method

  1. Dry Roast The ingredients- Heat a heavy- bottomed pan over low medium heat. Add all the ingredients to the panand dry roast them without adding oil. Roast patiently, stirring continously, until the spices become fragrant and the coconut turns lightly golden. Be careful not toburn the spices, especially the chillies and coconut, as burnt spices make the masala bitter.
  2. Cool completely- Transfer the roasted spices to a large plate or tray and allow them to cool completely. This step is important before grinding. Grinding the mixture while it is hot can affect the texture and aroma of the masala.
  3. Grind the masala- Once completely cooled, transfer everything to a mixer grinder. Grind into a fine or slightly coarse powder, depending on how you prefer the texture of your Saoji masala. For the traditional texture, avoid making it extremely fine.
