Black eye pea salad recipe


Salads these days are getting so much better and numerous varieties are flooded. My husband is very fond of salads and likes exploring different types. So I don’t have to think much about the consumption of my food lol.. He loves rainbow in his plate .

Today’s salad is made of beans, having beans in diet helps you maintain healthy lifestyle. So if you are hesitating in including beans stop now and have them in any which form you love.

Use raw or you can blanch it and use. I did blanch it with salt. Mix with veggies and some spices.

Adding some roasted peanuts can make this salad more crunchy. I did skip adding sugar or honey, feel free to add to balance the taste. We prefer it a bit sour.

Black eye pea salad

Ingredients

  • 1 cup chawali seeds/ black eye pea
  • 1 tablespoon beetroot chopped
  • 1/2 cup tomato chopped
  • 2 tablespoon cucumber chopped
  • 1 tablespoon carrot chopped
  • 1 tablespoon coriander leaves chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon black pepper powder
  • 1/4 teaspoon Kala namak
  • 1/4 teaspoon salt
  • 1/4 teaspoon chaat masala
  • 1 tablespoon roasted peanut

Method

  • Blanch the beans in salt water for 5 minutes and strain it
  • In a mixing bowl add all the given ingredients with the Blanched beans.
  • Add the spices given with salt, roasted peanut and lemon juice
  • Toss it up, garnish with coriander leaves and enjoy
