Kurkure Bhel

Ingredients

  • Pack of kurkure (favourite flavour)
  • 1/2 onion Chopped
  • 1 tomato chopped
  • Coriander leaves
  • Nylon sev
  • 1 tablespoon green chutney
  • 1 tablespoon tomato sauce
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon Kala namak/ rock salt
  • 1/2 teaspoon red chili powder

Method

  • First open the pack and keep aside some kurkure, rest you crush them up.
  • Now in a mixing bowl add crushed kurkure, onion, tomato, red chili powder, chaat masala, Kala namak, coriander leaves, sev n tomato sauce.
  • Mix all this well
  • Add in the leftover kurkure and mix
  • Take a serving glass or bowl
  • Fill the kurkure bhel top with some sev and serve this to your guests or friends.

I guess we all here are chocolate lovers be it light or dark chocolate. Cooking with chocolate is always fun and in this process you can get your kids involved.

Making chocolate balls are a complete fun process but making the cups can get a bit tricky as they tend to break fast.

If the weather you are working is hot, take special care for the chocolate cups, rest everything is simple.

This can be served at kids birthday party or kitty party. Will definitely be an eye catcher with the guests.

Make these chocolate cup balls two days prior, so that you don’t have to rush in the last moment.

Chocolate Cup Balls

Ingredients :

  • 2 large pack Good day biscuits (or any biscuit)
  • 1 cup milk
  • 1 tablespoon vanilla essence
  • 300 grams melted dark chocolate
  • 2 variety of sprinklers
  • Chocolate syrup for garnish (optional)

Method :

  • Crush biscuits and grind to fine powder
  • Place them in a mixing bowl
  • Knead a soft dough using milk,vanilla essence
  • Roll them into small balls
  • Let them set for 1 hour in refrigerator
  • Meanwhile coat cupcake liners or cups with melted chocolate
  • It should be thick base
  • Flip the cup upside down and let the excess chocolate drip
  • Let this cup set in refrigerator for 1 hour or 2
  • After 2 hours bring cups out of the refrigerator
  • And gently remove the cups without breaking them, this is a bit tricky if one is doing it for the first time.
  • Be patient and do
  • Once the cups are out of the liner, place them again in the refrigerator, so that it doesn’t melt.
  • Getting to the biscuit balls
  • After 1 hour dip the balls in melted chocolate and coat it well on all sides
  • Roll it into sprinklers and place them in a plate to dry
  • When all the balls are coated well, remove the chocolate cups from the refrigerator and place these balls in them
  • Drizzle with some chocolate syrup if you wish
  • Serve them just before the party begins

Have you heard about Falafel or eaten, I guess many of you might have tasted this dish. How many of you have tried making this at home or searching for any easy recipe, then you are in the right place, go ahead and do enjoy by reading and cooking.

What is Falafel?

This is a Mediterranean dish with mashed chickpea flavored with some spices and served with pita bread or enjoyed with hummus.

When one hears Mediterranean dish instance thought comes to our mind is non veg, yes but this particular dish is vegetarian ,so be happy.

It usually gets difficult for pure vegetarian people like me to eat while traveling abroad , falafel are savour for us.

Nutrition level is high on falafel for chickpea being the main ingredient here. Falafel is served with pita bread but you can have them with your favorite dip also. Middle East countries do have some awesome cuisine, which we can include in our daily cooking.

Furthermore you can even use your regular roti and stuff falafel with the given curd mixture and chutney, one of the best lunch box recipe to pack for your kids or for office.

  2. They are crispy from out and soft n delicious from inside.

Falafel

Falafel recipe

Ingredients

  • 1/2 cup chickpea flour /besan
  • 1 cup chickpea /kabuli chana
  • 1/2 tablespoon black pepper powder
  • A bunch of coriander leaves
  • 7 to 8 garlic
  • 1/4 tablespoon jeera/cumin
  • Coriander chutney for garnish
  • Curd and onion mixture for garnish
  • 1 onion chopped
  • 2 tablespoon lemon juice
  • salt as per taste
  • oil for deep frying
  • shredded cabbage for garnish
  • Roti for making wrap

Method

  • Wash and soak chickpea overnight in water
  • Next day take a blender jar add chickpea, onion, lemon juice, jeera, coriander leaves, garlic and salt
  • Grind into a coarse paste
  • Add chickpea flour and blend again
  • Remove the falafel mixture in a bowl
  • Add black pepper powder
  • Mix it well
  • Refrigerator it for 2 hours
  • After 2 hours remove it from the fridge and start making small lemon size balls out of the dough
  • Heat oil for deep-frying
  • Deep-fry till golden brown in colour
  • Add one ball at a time in the oil to make it easy for frying
  • Falafel is ready to be served
  • Enjoy it while crispy hot with your favorite dip.
  • Serve it on cabbage leaves and garnish with coriander chutney and the curd mixture.
  • You can wrap falafel in roti with curd mixture and chutney

Eggless dark chocolate mousse


I have already posted a mousse recipe before, today I am posting mousse recipe with dark chocolate. As said making mousse is super easy one with only 3 ingredients. Loved by everyone in the house and the best part is that you can store it in refrigerator,use if you have guests over.

A hassel free recipe where you can involve your kids aswell.This chocolate mousse was made by my twins,where one went chopping the chocolate and the other went whisking.

Eggless Chocolate mousse

Ingredients:

  • 300 grams dark/semi dark chocolate
  • 500 grams fresh cream
  • 1 tablespoon vanilla extract
Soft peak of mousse

Method:

  • Take a bowl pour in the cream
  • Place it on the burner
  • Cook till you notice the edges boiling
  • Off the flame
  • Remove from the gas
  • Chop chocolate and keep in a bowl
  • Pour the hot cream on the chocolate
  • Mix it well using a whisk
  • Mix till the chocolate has melted
  • Add in vanilla extract
  • Refrigerator it overnight
  • Next day remove it from the refrigerator
  • Whisk it on high speed for 2 to 3 minutes
  • Once you notice soft peaks stop blending
  • Pour the mixture into the piping bag
  • Fill the cups and glasses
  • Serve them chilled.
  • Eggless Chocolate mousse is ready

Samosa recipe/ How to make samosa


This generation is divided into two parts half being the pizza gang and half being the Indian samosa gang😂😂I hope you agree,if not you are free to do so😉but if you take on a serious note there still are people who would give away pizza for samosa and with people I mean the younger generation.

And the gang that I am talking about is none other than my twins,they love samosa.The street from where they pass by for classes has a small hotel from where aroma of Deep frying samosas just make you feel hungry and wanting to just have , from that place samosa have become my twins fav,in either way it had to happen as their dad is a hardcore fan of Samosa 😃.

Coming from Uttar Pradesh where all the samosa and chaat stuff started making them was never a big deal and every house had their own way of making masala.The whole trick lies in the masala or stuffing of samosa a little bit here n there with the masala you are gone,so perfect quantity of spices is the main stuff.

This recipe which I am sharing is the one made by all the local shopkeepers from Purvanchal region and main bazar of our native place that’s Pattinarendrapur,any person who has tried samosa from UP will get easily connect to it by have this one.

Samosa

Makes around for ten people.

Ingredients

  • Half kg maida/All purpose flour
  • 1 kg potato/boiled and mashed
  • Oil for deep frying, shortening and frying masala
  • 1 tablespoon kalonji n ajwain
  • Salt for the dough and stuffing
  • Water
  • 200 grams coriander leaves
  • 10 green chillies or as per taste
  • 1 tablespoon coriander seeds
  • 10 cloves of garlic
  • 1 tablespoon Red chilli powder
  • 2 tablespoon coriander powder
  • 1 tablespoon saunf/fennel seed
  • 1/2 tablespoon rai/mustard seed
  • 1/4 tablespoon hing/asofetida
  • 1/2 tablespoon amchur powder
  • 1/2 tablespoon Haldi powder
  • 5 to 6 curry leaves

Method

  • Now that you have boiled and mashed potatoes keep it aside
  • Take a blender jar and blend all this ingredients- green chillies, coriander leaves, haldi powder, coriander seeds,garlic, curry leaves and coriander powder with little water
  • Keep the paste aside

  • Heat kadhai with oil add rai let it crackle
  • Add saunf/fennel seeds,saute
  • Pour in the paste and fry till oil leaves the sides
  • Now add in salt,amchur powder and hing
  • Cook for a second
  • Add in the mashed potatoes
  • Give it a nice mix,here you need some muscle power😀
  • Let them cool
  • Meanwhile knead the dough with salt,oil,kalonji,ajwain and water

  • Start rolling into disc shape and cut into half
  • Make triangular shape

  • And stuff the potato mixture
  • And seal the ends by pressing well or applying water at the edges
  • Stuff all the samosas in that shape and keep ready

  • Heat oil for deep frying
  • Start frying all the samosas till light brown in colour
  • Serve them with dahi or chutney
  • Have a party then do try this samosas make them before and stock,just microwave them before the party starts and serve hot

How to make Methi Papdi/Recipe of Papdi


Indian street food can never ever be complete without papdi,now papdi chaat is all time favorite in and around the world .And did you know it can be made in the house and much better and healthier.

So today’s recipe is papdi perfect for summer vacations as kids keep craving for some thing or the other whole day,just make these papadis and let them decide what topping they love on it.make them in bulk and store😊trust me they’ll be vanished in days.

The store one’s are made of maida/refined flour,but I have used wheat flour with maida as well,but the ratio is 1:1 as my twins eat them in every alternate days so i have to be cautious in what they eat and eating maida/refined flour on daily basis is just a No No for me.

This papdi can be used for dahi puris,bhel , papadi chaat and sev puri.

Ingredients

  • 1 cup wheat flour
  • 1 cup maida/refined flour
  • 1 tablespoon kasuri methi
  • 1 tablespoon ajwain
  • 1 1/2 tablespoon salt
  • Oil for deep frying
  • Round cutter for shape
  • 5 tablespoon oil
  • Water for kneading the dough
  • Fork for pricking holes

Method

  • Take Maida and wheat flour in a large bowl in which mixing can be done
  • Add salt,kasuri methi and 5 tablespoon oil
  • Mix it well with your hands
  • Add water if required and knead a soft dough
  • Let it rest for half an hour
  • Take small portions of the dough and roll into large round shape just like roti
  • Using round cutter,cut them into shape
  • Using the fork prick holes on the rolled papdi
  • Spread them on sheet or newspaper
  • In same manner make all the papdi
  • Remember while spreading on the paper keep it covered with a wet cloth
  • Otherwise it will dry up
  • Now,deep fry them till light brown
  • Store them in air tight container
  • This can be used for one month.
  • Your delicious papdi are ready
  • Serve them a quick snack to your guests.
  • Adding oil to the dough makes it crispy don’t skip this.

Mango Salsa


Yes,you heard it right Mango salsa this is a complete seasonal recipe and made best during mango season. As the produce is fresh,not cold storage one.Ripe mangoes with some salt and pepper makes it really delicious and lipsmacking.With few ingredients from your pantry you can make this super tasty salad.We basically eat them with roti.I have used Alhanso mangoes in this dish you can use whichever mango available near you.

Salsa- This is basically Latin American word,salsa means tomatoes, onions and green chillies sauce or mixture. Salsa is a American dance form also.

In Purvanchal the mixture of onions,tomatoes and green chillies with coriander leaves is called kukhumber.Every place has its own version with some twist.

  • 1 green chilli finely chopped
